🍍 Pineapple Cream Cheese Cobbler

Ingredients

For the Filling:

  • 1 can (20 oz) crushed pineapple, with juice

  • 1 can (15–20 oz) pineapple chunks or tidbits, drained

  • 1 cup sugar (or ¾ cup if you prefer less sweetness)

  • 1 tsp vanilla extract

  • 1 tbsp cornstarch (optional for thicker filling)

For the Cream Cheese Layer:

  • 8 oz cream cheese, softened

  • ½ cup sugar

  • 1 tsp vanilla extract

For the Cobbler Batter:

  • 1 cup all-purpose flour

  • 1 cup sugar

  • 1 cup milk

  • 1 tsp baking powder

  • Pinch of salt

Plus:

  • ½ cup (1 stick) butter, melted


🧑‍🍳 Directions

1. Prep the pan

  • Preheat oven to 350°F (175°C).

  • Pour melted butter into the bottom of a 9×13 baking dish (do not mix).


2. Make the pineapple filling

  • In a bowl, combine:

    • crushed pineapple with its juice

    • drained pineapple chunks

    • sugar

    • vanilla

    • (optional) cornstarch

  • Mix and set aside.
