🍍 Pineapple Cream Cheese Cobbler
Ingredients
For the Filling:

1 can (20 oz) crushed pineapple, with juice

1 can (15–20 oz) pineapple chunks or tidbits, drained
-
1 cup sugar (or ¾ cup if you prefer less sweetness)

1 tsp vanilla extract
-
1 tbsp cornstarch (optional for thicker filling)
For the Cream Cheese Layer:

8 oz cream cheese, softened
-
½ cup sugar
-
1 tsp vanilla extract
For the Cobbler Batter:

1 cup all-purpose flour
-
1 cup sugar
-
1 cup milk
-
1 tsp baking powder
-
Pinch of salt
Plus:
-
½ cup (1 stick) butter, melted

1. Prep the pan

Preheat oven to 350°F (175°C).

Pour melted butter into the bottom of a 9×13 baking dish (do not mix).
2. Make the pineapple filling

In a bowl, combine:

crushed pineapple with its juice
-
drained pineapple chunks
-
sugar
-
vanilla
-
(optional) cornstarch
-
