🥞 Best Fluffy Pancakes

Ingredients (makes 8–10 pancakes)

  • 1 cup all-purpose flour

  • 2 tbsp sugar

  • 2 tsp baking powder

  • ¼ tsp salt

  • 1 cup milk (room temperature)

  • 1 large egg (or ¼ cup yogurt for eggless)

  • 2 tbsp melted butter or oil

  • 1 tsp vanilla extract


🍳 Instructions

1️⃣ Mix dry ingredients

In a bowl, whisk:

  • flour

  • sugar

  • baking powder

  • salt

2️⃣ Mix wet ingredients

In another bowl, whisk:

  • milk

  • egg

  • melted butter

  • vanilla

3️⃣ Combine gently

Pour wet into dry.
Stir just until combined — batter should be slightly lumpy.
Overmixing makes pancakes flat.

4️⃣ Rest the batter

Let it sit for 5 minutes.
This activates the baking powder → super fluffy pancakes!

5️⃣ Cook the pancakes

  1. Heat a nonstick pan on medium-low.

  2. Lightly grease.

  3. Pour ¼ cup batter for each pancake.

  4. When bubbles appear on top and edges look set, flip.

  5. Cook another 1–2 minutes.


Fluffy Pancake Tips

  • Use medium-low heat for height.

  • Let the batter rest — don’t skip this!

  • Don’t press pancakes while cooking.

  • For extra thick pancakes, reduce milk by 1–2 tbsp.
