In a bowl, whisk together eggs and milk until smooth.

Stir in ham, cheese, veggies (if using), salt, and pepper.

Evenly pour the mixture into the muffin cups (about ¾ full).

Bake for 18–22 minutes, until set in the center.

Cool for 5 minutes, then gently remove from the tin.
