Chocolate Chip Zucchini Cookie Bars


Instructions

  1. Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.

  2. Mix wet ingredients: In a large bowl, whisk together melted butter, brown sugar, granulated sugar, egg, and vanilla until smooth.

  3. Add zucchini: Stir in grated zucchini.

  4. Mix dry ingredients: In another bowl, whisk flour, baking soda, baking powder, salt, and cinnamon.

  5. Combine: Add dry ingredients to the wet mixture and stir until just combined. Fold in the chocolate chips.

  6. Bake: Spread the batter evenly in the prepared pan. Sprinkle a few extra chocolate chips on top.

  7. Bake for 25–30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean (a little chocolate is okay!).

  8. Cool and slice: Let cool completely in the pan before cutting into bars.


Tips

  • For extra texture, stir in ½ cup chopped walnuts or pecans.

  • If you like softer bars, slightly underbake them.

  • These freeze beautifully — just wrap tightly and store up to 2 months.
