Classic Vegetable Fried Rice
Ingredients:
- For the Rice:
- 3 cups cooked day-old white rice (cold, chilled rice works best for fried rice)
- 1 tbsp vegetable oil (for cooking the rice)
- For the Stir-fry:
- 2 tbsp vegetable oil (or sesame oil for added flavor)
- 1/2 cup diced carrots
- 1/2 cup frozen green peas
- 1/4 cup finely diced yellow onion (optional, or green onions)
- 2 cloves garlic, minced
- 2 large eggs, lightly beaten
- 2 tbsp soy sauce (or more, to taste)
- 1 tsp sesame oil (optional, for flavor at the end)
- Pinch of white pepper (optional)
- Chopped green onions or cilantro for garnish (optional)
