Ingredients:

  • For the Rice:
    • 3 cups cooked day-old white rice (cold, chilled rice works best for fried rice)
    • 1 tbsp vegetable oil (for cooking the rice)
  • For the Stir-fry:
    • 2 tbsp vegetable oil (or sesame oil for added flavor)
    • 1/2 cup diced carrots
    • 1/2 cup frozen green peas
    • 1/4 cup finely diced yellow onion (optional, or green onions)
    • 2 cloves garlic, minced
    • 2 large eggs, lightly beaten
    • 2 tbsp soy sauce (or more, to taste)
    • 1 tsp sesame oil (optional, for flavor at the end)
    • Pinch of white pepper (optional)
    • Chopped green onions or cilantro for garnish (optional)
