Instructions

In a bowl, mix warm water, yeast, and sugar. Rest 5 minutes until foamy.

Add flour, salt, and olive oil. Knead until soft and smooth.

Cover and let rise 1 hour, until doubled in size.

Mix all filling ingredients in a bowl.

Divide dough into 2–3 balls. Roll each into a circle.

Place filling in the center, fold edges over, and seal well.

Gently flatten slightly and place on a lined baking tray.

Brush tops with egg wash and sprinkle seeds if using.

Bake at 375°F (190°C) for 20–25 minutes, until golden.

Cool slightly, slice, and serve warm.
