Healthy Pickled Beets

Ingredients

For the beets:

  • 4–5 medium beets, trimmed and washed

  • Water for boiling

For the brine:

  • 1 cup apple cider vinegar (or white vinegar)

  • 1 cup water

  • 1–2 tbsp honey or maple syrup (adjust to taste)

  • 1–1¼ tsp salt

  • 2–3 garlic cloves, lightly crushed (optional)

  • ½–1 tsp whole peppercorns (optional)

  • 1 bay leaf (optional)


Instructions

1. Cook the Beets

  1. Place whole beets in a pot and cover them with water.

  2. Bring to a boil, reduce heat, and simmer 30–45 minutes until fork-tender.

  3. Drain and let cool slightly.

  4. Rub off the skins (they should slide off easily).
