Healthy Pickled Beets
Ingredients
For the beets:

4–5 medium beets, trimmed and washed

Water for boiling
For the brine:

1 cup apple cider vinegar (or white vinegar)

1 cup water
-
1–2 tbsp honey or maple syrup (adjust to taste)

1–1¼ tsp salt
-
2–3 garlic cloves, lightly crushed (optional)
-
½–1 tsp whole peppercorns (optional)
-
1 bay leaf (optional)
Instructions
1. Cook the Beets

Place whole beets in a pot and cover them with water.

Bring to a boil, reduce heat, and simmer 30–45 minutes until fork-tender.

Drain and let cool slightly.

Rub off the skins (they should slide off easily).
