🥩 Cooking a Home-Raised Steak (Pan-Seared or Grilled)

1️⃣ Let it come to room temperature

  • Take the steak out of the fridge 30–60 minutes before cooking.

  • Pat it dry with paper towels — moisture prevents browning.


2️⃣ Season simply

  • Sprinkle generously with kosher salt and freshly ground black pepper on both sides.

  • You can add a little garlic powder or herb rub, but for home-raised beef, simple is best to taste the natural flavor.


3️⃣ Preheat your pan or grill

  • Cast-iron skillet: Medium-high heat until very hot. Add a bit of oil with a high smoke point (like avocado or canola oil).

  • Grill: Heat to about 450–500°F (230–260°C).


4️⃣ Sear and cook

  • 1-inch thick steak:

    • Medium-rare: 3–4 minutes per side.

    • Medium: 4–5 minutes per side.

    • Adjust slightly for thicker cuts.

  • Don’t move it too much — let it develop that golden crust.
