🥩 Cooking a Home-Raised Steak (Pan-Seared or Grilled)
1️⃣ Let it come to room temperature

Take the steak out of the fridge 30–60 minutes before cooking.

Pat it dry with paper towels — moisture prevents browning.
2️⃣ Season simply

Sprinkle generously with kosher salt and freshly ground black pepper on both sides.

You can add a little garlic powder or herb rub, but for home-raised beef, simple is best to taste the natural flavor.
3️⃣ Preheat your pan or grill

Cast-iron skillet: Medium-high heat until very hot. Add a bit of oil with a high smoke point (like avocado or canola oil).

Grill: Heat to about 450–500°F (230–260°C).
4️⃣ Sear and cook

1-inch thick steak:

Medium-rare: 3–4 minutes per side.

Medium: 4–5 minutes per side.

Adjust slightly for thicker cuts.
