Make the glaze:
-
In a saucepan, combine honey, brown sugar, mustard, and vinegar.
-
Add cloves and cinnamon if using.
-
Bring to a gentle simmer over medium heat until sugar is dissolved and mixture is syrupy (about 5 minutes).
Glaze and bake:
-
Brush half the glaze over the ham.
-
Cover loosely with foil and bake for 1½ to 2 hours (about 15 minutes per pound), basting every 20–30 minutes.
Caramelize:
-
In the last 20 minutes, remove the foil and brush with the remaining glaze.
-
Let it bake uncovered until the outside is glossy and caramelized.
Rest and serve:
-
Let the ham rest 15–20 minutes before slicing.
-
Drizzle any pan juices over the slices for extra flavor.
💡 Tips
-
For extra flavor, use pineapple juice instead of vinegar or orange juice in the glaze.
-
Leftover ham makes great sandwiches, omelets, or soups!
-
You can reduce the remaining glaze on the stovetop to make a honey-mustard sauce for serving.
