Heat the oil

In a bowl, whisk together flour, sugar, baking powder, and salt.

In another bowl, whisk the egg, milk, and vanilla.

Pour wet ingredients into the dry and whisk until smooth.

Batter should be slightly runny (like pancake batter).

Too thick? Add 1–2 tbsp milk.

Fry the bites

Use a squeeze bottle, piping bag, or spoon to drop small blobs of batter into the hot oil.

Fry 1–2 minutes per side, until golden and puffy.

Remove and drain on paper towels.

Want it extra crisp? Add 1 tablespoon cornstarch to the dry mix.
