  • 2–3 cloves garlic – Finely chopped
  • 1 large onion – Finely chopped
  • 1 red bell pepper – Finely diced
  • 2 tomatoes – Peeled & deseeded, diced
  • 200 ml fish stock – Made from the scampi shells
  • 70 g tomato paste – For extra depth
  • 250 ml cream – For a velvety sauce
  • Cayenne pepper – To taste
  • Scampi seasoning – To taste
  • Salt & pepper – To taste
  • Butter & olive oil – For frying
  • Fresh chives or parsley – For garnish
